Eggplant Pizza

  • One medium eggplant

  • Extra Virgin Olive Oil

  • Finely shredded Mozzarella and/or Parmigiana cheese.

  • Marinara sauce or Cowboy Marinara sauce (ketchup) pre-heated. Place in a container with pouring spout.

  • Dried crushed Oregano.

  • Salt.

  • Ritz crackers.

1. Place 1/4 sleeve of Ritz crackers in a zipper bag and crush to cornmeal consistency. Place breading in a flat saucer.

2. Peel and slice Eggplant into 1/2” thick rounds.

3. Salt and coat Eggplant slices with Extra Virgin Olive Oil

4. Bread Eggplant slices in Ritz breading.

5. On medium heat coat skillet with Extra Virgin Olive Oil

6. When oil shimmers carefully place Eggplant slices in skillet.

7. Cook for 3 1/2 minutes and turn over.

8. Liberally sprinkle Oregano on Eggplant slices. Then put the equivalent of one teaspoon of Marinara sauce on each slice and spread. Put a liberal pinch of Mozzarella or Parmigiana cheese on each slice.

9. Cook for 3 minutes, cover with lid for 30-60 seconds to ensure cheese is melted.

10. Remove from heat and serve.
