Potato Medley Skillet

Serves four. Ingredients:

  • Two cups cubed Irish(white) potatoes. 3/8”-1/2”

  • Two cups cubed sweet potatoes. 3/8”-1/2”

  • Two medium onions quartered then cut quarters in half short ways. Then de-layer.

  • Six medium cloves of garlic sliced.

  • 1/8-1/4 cup Extra Virgin Olive Oil.

  • Optional:(any or all)

  • One half red bell pepper chopped.

  • Six plum tomatoes or grape tomatoes quartered if plum or halved if grape.

  • One teaspoon red pepper flakes.

Cover well (1/8-1/4 cup) bottom of 10-11” skillet with Extra Virgin Olive Oil on medium heat.

When oil is hot, carefully put potatoes and onions in skillet. Mix well.  Cover and stir occasionally for 5 minutes. Add any optional ingredients. Cover and stir for 10 minutes or until potatoes are tender and onions are clear.

Remove from heat and serve.
