Nopales (cactus)

  • 1 c fresh nopales

  • 2 tbsp tomatoes

  • 4 tbsp onions

  • 2 tbsp cilantro

  • 1 tbsp jalapenos

  • 1 head fresh garlic

  • Salt & pepper

  • Olive oil

Boil nopales for about 15 minutes; add salt & pepper and 2 tbsp onions until semi-soft, rinse well with warm water.

Sautee 2 tbsp onions, jalapeno, cilantro, and tomatoes in olive oil for 10 minutes then add nopales to pan stirring occasionally for another 5 minutes. 

I enjoy eating this in a corn tortilla.

Estimated time 25 - 30 minutes.
