Summer Squash Pizza Bites

  • Extra Virgin Olive Oil

  • Finely shredded Mozzarella and/or Parmigiana cheese.

  • 1 tsp Marinara sauce or Cowboy Marinara sauce (ketchup) pre-heated. Place in a container with a pouring spout.

  • Dried crushed Oregano.

  • Salt.

  • Ritz crackers.

  • Garnish as desired

Place 1/4 sleeve of Ritz crackers in a zipper bag and crush to cornmeal consistency. Place breading in a flat saucer.

Slice squash into 3/8” thick rounds. Salt and coat squash slices with Extra Virgin Olive Oil then coat in Ritz breading.

On medium heat coat skillet with Extra Virgin Olive Oil. When oil shimmers carefully place squash slices in skillet.

Cook for two minutes and turn over.

Liberally sprinkle Oregano on Squash slices. Then put Marinara sauce & a liberal pinch of Mozzarella or Parmigiana cheese on each slice.

Cook for one minute, and cover with a lid for 30-60 seconds to ensure the cheese is melted.

Remove from heat and serve.
