Veggie Omelet
- 2 eggs 
- Handful of spinach 
- Handful of shredded cheese of choice 
- 2 tbsp diced tomatoes 
- 1 tbsp chopped onions 
- Salt & pepper to taste 
- Olive oil 
Sautee veggies in olive oil for 5 mins on medium heat stirring occasionally; set aside.
Scramble eggs with salt & pepper. Add eggs to skillet; add olive oil as needed.
Move the pan often to allow eggs to cover the whole pan; flip once cooked on the bottom.
Add cheese & sauteed veggies. Fold egg on one side; finish cooking and serve.
